Motivation to a Sweet Life for a Sweet Tooth Runner

WARNING- This dessert is not exactly what you would call healthy. But you gotta have a little fun once in awhile…right!

We had a last minute dinner party and I was in a hurry to whip up a quick dessert. I put on my creative hat and invented the Easiest Ice Cream Pie ever!

You will need:

  • 1 package of Oreo Cookies- I used regular stuffed Oreos. You could try double stuffed Oreos. I don’t recommend using Reduce Fat Oreos because there is not enough frosting to make the crust work.
  • 2 TBS melted Butter
  • 1/2 of a Half Gallon Chocolate Peanut Butter Cup Frozen Yogurt
  • A little Whipped Cream
  • Chocolate Sauce

To make the crust:

Use two rows of Oreos and place into a large zip lock bag. Make sure to press the bag flat to get all the air out. Once all the air is out of the bag, place the bag on a flat, stable surface and use a heavy pan to crush the Oreos. I like big chunks of Oreos, in my crust, so I don’t crush them as much. Once the Oreos are crushed to your liking place them in a circle 9 inch pie pan and pour the melted butter on top. Use your fingers to press the crust out to form the bottom of the pan. Set aside. You do not need to bake this crust.

To make the filling:

Let your Frozen Yogurt soften on the counter for at least 30 minutes. After the Frozen Yogurt is soft enough where it is spreadable, scoop out five large scoops (about half of the 1/2 gallon) onto the Oreo Crust. Spread the ice cream evenly over the crust. Place a piece of aluminum foil on top and gently press down making sure there is no air between the ice cream and foil. Place the pie in the freezer for at least two hours.

To Serve:

Take the ice cream pie out of the freezer and let it rest on the counter for 10 minutes or until the ice cream is soft enough to cut through. Cut the pie into triangle pieces and serve with a dollop of whipped cream and chocolate syrup!

I used HOME MADE WHIPPED CREAM- It is the best!

All you need is:

  • Heavy Cream
  • Powdered Sugar
  • Vanilla Extract

In my Kitchen Aid Mixer I add about 1/2 Cup Heavy Cream and about 1 TBS Vanilla Extract. I mix on high until you get stiff peaks. Then add about 1/4 cup Powdered Sugar. Mix until blended. You can’t go wrong with this recipe. It is hard to mess up.
